Let me start by saying I have a crazy addiction to peanut butter cookies. I use to eat not so healthy peanut butter cookies, before my journey, every single day before work. I lived off peanut butter cookies but since starting my journey I had to give them up and I was thrilled when Nicole shared this recipe with me because I can eat them again although I have to restrain myself from eating them all.

Healthier Peanut Butter Cookies

  •  1 cup of peanut butter (any kind you like regular, natural, homemade)
  •  1/2 cup of sugar
  •  1 egg
  •  1 tsp vanilla
  •  1/2 tsp baking powder
*This makes  about 14 cookies*
Preheat oven to 350°. In medium bowl combined all ingredients and mix together. Take a spoonful of dough and roll into a ball. Place on a ungreased baking sheet. Take a fork and flatten making a crosshatch pattern across the top. Bake around 10 minutes. Let the cookies rest for 5 minutes before removing from the baking sheet.

    I pinned this for sure! My 2 guys (hubby and my toddler) love peanut butter! I am always looking for healthier alternatives to the things we love to eat, especially me and hubby since we want baby to start off with better habits! :)

    Good, but I would add some wheat germ for some extra crunch and the extra health benefits. I also used egg whites instead of a whole egg, but would recommend cooking it longer so it isn’t too undercooked.
